Can I ride with M Carbon wheels in winter when salt is spread on the roads?

Yes, without any restrictions whatsoever. The clearcoat finish protects against corrosion. Damage to the clearcoat finish, however, such as can be caused by flying stones, has to be professionally repaired by an authorised BMW Motorrad retailer in order to prevent corrosion from starting.
